Ever since we’re young our parents, teachers, and even physicians engrain into our brains that we should be drinking milk because it contains calcium, which helps us build strong bones. However, milk is not the holy grail of dietary calcium, there are many other [plant-based] foods that are also great sources of calcium, such as tofu and kale.

This tofu scramble breakfast taco recipe is actually 3 recipes combined into 1. These tacos feature a simple tofu scramble, a garlic-y guacamole, and a smokey black bean recipe.

Here’s the recipe:



  • 1 tbsp vegetable oil
  • 1 can black beans
  • 1 tbsp paprika
  • 1 tbsp cumin
  • splash of liquid smoke
  • ¼ cup water
  • salt to taste


  • 1 tbsp vegetable oil
  • 1 block extra-firm tofu, crumbled
  • dash of turmeric
  • 3 tbsp nutritional yeast
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • splash of almond milk
  • optional: black salt (for an extra egg-y taste)


  • ½ avocado, mashed
  • 1 tsp lime juice
  • 1 tbsp cilantro, chopped

to taste:

  • garlic & onion powder
  • salt & pepper


  • small whole grain tortillas
  • kale, chopped
  • red onion, diced & soaked in ice water
  • your favourite salsa
  • lime



  1. In a skillet over medium heat, heat vegetable oil then add the black beans, paprika, cumin and some salt.
  2. Stir to evenly coat the beans in the spices, and heat until spices are fragrant.
  3. Add the water and allow to cook until all of the water has evaporated.
  4. Remove from heat and add a splash of liquid smoke and stir to combine.
  5. Transfer to a bowl and return skillet to heat.


  1. In the same skillet, add the remaining vegetable oil and fry the crumbled tofu until it starts to brown.
  2. Add the spices and nutritional yeast and stir to evenly coat the tofu.
  3. Add a splash of almond milk to lift any spices from the pan, and cook for another 3-5 minutes.
  4. Remove from heat and stir in black salt.


  1. Combine all ingredients in a bowl and adjust seasonings to your preference.


  1. In the microwave, quickly steam the kale in a covered bowl (~30 seconds).
  2. Place tortillas on a plate and add the steamed kale, black beans, tofu scramble, guac, red onions, salsa, and a squeeze of lime.

*The black beans and tofu scramble make 4 servings, which is perfect for a family meal, or to meal prep for a few days!
